The development, spearheaded by Evergreen Devco, will introduce three distinct dining experiences that promise to transform the local food scene. Chef Troy Guard’s HashTAG breakfast spot, Prost Brewing’s expansive biergarten, and Ciaran O’Brien’s innovative Agora at Applewood are all slated to open within the next year. This trio of establishments aims to cater to diverse tastes and preferences, offering everything from hearty brunches to authentic German brews and multi-concept dining experiences. The project is strategically located near the Interstate 70-Highway 58 interchange, making it easily accessible to both locals and visitors.
Agora at Applewood, the brainchild of restaurateur Ciaran O’Brien, represents a significant leap forward in communal dining. Spanning 10,000 square feet, this venue will house six unique dining areas, each with its own distinct ambiance and menu. One can expect an Irish pub complete with a golf simulator, an Italian market featuring fresh deli items and pizza, and a sophisticated cocktail bar serving small plates. The concept also includes a family-friendly pub, a rooftop bar, and a space dedicated to ice cream and juice. O’Brien envisions Agora as a place where patrons can seamlessly transition between venues while enjoying their drinks, creating a truly immersive experience.
Chef Troy Guard’s HashTAG, already popular for its brunch offerings, will be expanding its footprint to Wheat Ridge. This new location marks Guard’s fourth HashTAG restaurant, with another downtown branch opening soon. Known for its creative takes on breakfast classics, HashTAG promises to bring a vibrant energy to the Clear Creek Crossing area. Meanwhile, Prost Brewing’s fifth location will offer an extensive selection of beers, including 40 taps, alongside traditional German fare like pretzels, sausages, and schnitzel. The brewery plans to invest between $5 million and $6 million in this 6,800-square-foot facility, which will feature a small brewing system for educational purposes rather than commercial production.
In addition to these dining spots, Clear Creek Crossing will boast green spaces designed to foster community engagement. A central area surrounded by the three buildings will feature live music stages, fire pits, and open-container policies, inviting visitors to linger and enjoy the scenic views of the nearby pond and mountains. Prost’s director of biergartens, Boyd Hoback, anticipates capturing mountain and ski traffic due to the site’s proximity to I-70.
